for a more substantial dish. Here is a simple version that will keep you satisfied all morning. S E R V E S 1 • 1 tbsp. extra virgin olive oil • 8 cherry tomatoes, halved • 2-3 tbsp. coarsely chopped avocado • 2 large eggs • 1 tsp. chopped fresh basil Preheat the broiler and place the top rack 3-4 inches away from the heat. In a small ovenproof skillet, heat the oil over medium heat. Add the tomatoes and saute until slightly softened, about 2 minutes. Stir in the avocado. Whisk the eggs together and season will salt and pepper to taste. Pour the eggs over the vegetables. Cook, lifting the edge with a heatproof spatula to let the eggs flow underneath, until the edges are set but the middle still is loose, about 3 to 4 minutes. Remove from the heat and place under the broiler. Cook until the eggs are puffed and lightly browned, about 2 to 3 minutes, until the center is cooked through. Remove from the oven and serve immediately.
